Martabak Telur

Martabak is a popular meal in Indonesia. It is a crepe-like dish which is filled with vegetables and minced meat. It needs chicken or duck eggs for the batter to make the pastry. But this pastry can be replaced by ready-made filo pastry.

The thin filo pastry is shallow-fried in a custom made flattened heavy wok. The ingredients are added, then the pastry is wrapped around the ingredients to make a parcel. It is then cut into squares for consumption. It is often eaten with slices of cucumber, and a dark brown sauce made of vinegar and palm sugar.

Bahan
15 kulit lumpia(spring rolls pastry)
1 ons daging cincang
1 bawang bombay
3 siung bawang putih
3 butir telur
Daun bawang iris halus
1/2 sendok teh bubuk kari
1 sendok makan kecap manis
gula pasir
garam
1/2 sendok teh lada putih
1/2 sendok teh pala

Cara membuat:

  1. Cincang  bawang bombay dan bawang putih lalu ditumis
  2. Masukkan daging, garam, merica, pala, bubuk kari, aduk rata, beri air sedikit. Lalu masukan kecap dan aduk rata lagi.
  3. Kocok telur, masukkan irisan daun bawang, dan campurkan daging cincang.
  4. Isi tiap lembar kulit lumpia dengan adonan di atas, bungkus seperti amplop (Put this mixture in a spring roll pastry, fold like an envelope]. Kemudian goreng dengan minyak sedikit margarine. Setelah matang, lalu dipotong potong segi empat.
