Putu Ayu

Putu Ayu are popular dessert in Indonesia. A steam cake with no butter, but coconut milk and shredded coconut, quite easy and quick to make.

Putu Ayu uses Pandan paste or essence. Pandan Essence is an essence extracted from the leaves of the screwpine (Pandanus amaryllifolius). It comes in two varieties: Pandan essence – a clear liquid and Pandan paste – deep-green and quite thick.

Pandan essence or paste is used in place of fresh pandan leaves, to flavour and colour cakes and desserts, as it is sweet and imbues foods with a bright green color. It can be purchased as a ready-to-use paste in Asian specialty stores. If purchased fresh, pandan leaves should be pounded into a paste for use in desserts, adding water sparingly.

Bahan
300 gr gula pasir
300 gr tepung terigu
170 ml santan
4 butir telur
1 sendok teh ovalet(emulsifier)
pasta pandan(pandan paste or pandan essence) secukupnya
kelapa parut secukupnya (untuk taburan/ for sowing)

Cara :
1. Kocok gula dan telur, masukkan ovalet,campur terus sampai mengembang
2. Masukan terigu dan santan bergantian ke adonan pertama sambil diaduk rata, kemudian masukkan pasta pandan
3. Kelapa parut direndam air panas, tambahkan garam, susun di dasar(pour as a base) cetakan yg sudah diolesi minyak( light greased pan), kemudian masukkan adonan di atas, kukus kira-kira 30 menit.
